We are well into September now and I promised my Peach Cobbler recipe. Hope you enjoy it!
Peach Cobbler
2 c. peaches w/juice
2 Tbl. butter, melted
Cinnamon & Nutmeg to taste
1 Tbl. cornstarch (dissolved in 1/2 c. cold water)
Combine these and set aside. Heat oven to 350 degrees.
1 c. milk
1 c. flour
1 pinch salt
1 Tbl.. cinnamon
1 c. white sugar
2 tsp. baking powder
1/2 c. butter
1 tsp. nutmeg
Combine milk, sugar, flour, baking powder, and salt. Beat until smooth.
Melt 1/2 c. butter in your baking pan (8x8, I think). Pour batter over melted butter. Spoon peach mixture over batter. Sprinkle with more cinnamon & nutmeg.
Optional (you can experiment with this - I don't have it written down, so these measurements are approximations): If you want a crunchy, sweet topping, mix 1/2 c. brown sugar, 1/2 white sugar, cinnamon, 1/2 c. melted butter and add flour until it forms small pea-sized bits. Put this on top of the peach mixture.
Bake for about an hour or until a knife inserted comes out clean.
