I was enjoying a bowl of Onion Soup with Mozzarella Cheese melted in it for dinner and thought I'd share the recipe with you. It's so easy and so good! It's also gluten and sugar free.
The Cinnamon Contessa's Onion Soup
2 Cartons of Rachael Ray's Beef Broth
10 Med. Yellow Onions, sliced fairly thin (A food processor works great for this)
1 Stick of Butter
Salt & Pepper to taste
Makes about 6 Quarts of Soup or 12 Servings
Sautee the onions in the butter until caramelized. Add the Beef Broth, salt and pepper. Let it simmer for an hour. Serve with mozzarella cheese on top.
